Moroccan pastilla
Pastilla in Amsterdam
Hand-folded warqa pastry, layer on layer, around a savoury filling with almond and cinnamon. We bake the pastilla fresh in our own atelier in Amsterdam Nieuw-West — from a single one to a table full.
What is pastilla?
Pastilla — also bastilla or b'stilla — is the celebration dish of the Moroccan kitchen: paper-thin warqa pastry baked crisp around chicken, meat or fish, with almond, egg and cinnamon, and a dusting of icing sugar over the top. Sweet and savoury at once. Every sheet here is folded by hand, the way it should be.
Our pastillas
From bite-sized for a platter to a whole pastilla for the celebration table.
